Baked Baby Artichokes

Ingredients
8 Baby Artichokes, rinsed and trimmed

2 lemons
4 cloves garlic, sliced
olive oil for drizzling or olive oil cooking spray
Directions
Turn oven to 425 degrees. Clean Baby Artichokes (cut off tops, remove outer leaves, trim off stems), cut in half. You do not need to remove Artichokes. Drop them into a bowl of water in which you've squeezed one and a half lemons. Cut up the lemon skins into long slices. Drain artichokes and put into ovenproof casserole. Sprinkle with garlic and lemon slices. Drizzle with olive oil or spray with cooking spray. Bake for 45 minutes. Finally, squeeze last half lemon on top. Serve!
