No-Carb Cauliflower Spanish Rice

2 heads of raw Cauliflower, chopped in food processor or blender to resemble grains of rice (see video demo on Ocean Mist Farms Web site under Recipe Video - "I Can't Believe It's Not Rice")
1 red bell pepper, chopped
1 bunch Green Onions, chopped
1/2 bunch of cilantro, chopped
1 can (16 ounces) of black beans, drained (Optional-beans do add carb to dish)
2 tablespoons mesquite or taco dry seasoning
1 tablespoon garlic salt
1 tablespoon salt free garlic & herb seasoning
cooking spray


In large saute pan over medium-high heat, spray pan with cooking spray. Add red bell pepper, Green Onions and cilantro and cook until vegetables are very tender.

Add more cooking spray and add raw, chopped Cauliflower to vegetable mixture. Cook uncovered until Cauliflower is very tender (about 15 minutes). Make sure you stir Cauliflower so it cooks evenly.

Add seasonings and black beans and stir until heated through. Serve and enjoy!
