Ocean Mist Paella

Ingredients
1 large head of raw Cauliflower (finely chopped in food processor to resemble grains of rice)
3 sweet Italian sausage links, cooked and sliced into coins
1 pre-roasted chicken, cut into 6 large pieces
1 yellow Onion, chopped
1 red bell pepper, chopped
1/4 cup chopped curley parsley
1/4 cup for wine sauce
1 cup frozen petite green Peas
1/2 cup white wine
3 fresh roma tomatoes, chopped
1 bunch Green Onions, chopped
1/2 pound pre-cooked medium-size shrimp with tails
10 stuffed green olives, sliced
2 tablespoons of garlic salt
2 tablespoons salt free garlic & herb dry seasoning
2 tablespoons smokey sweet pepper seasoning or any other Spanish seasoning
Directions
Over medium high heat, spray large fry pan with cooking spray.
Add yellow Onion, red bell pepper, 1/4 cup parsley and Green Onions; saute vegetables until very tender.
Add finely chopped raw Cauliflower and saute until Cauliflower is fluffy and is the texture of cooked grains of rice (10-15 minutes). Add garlic salt, salt free herb seasoning and smokey sweet pepper seasoning to vegetable mixture and continue to stir over low heat. Add to Cauliflower mixture, sliced cooked Italian sausage and sliced green olives; stir until well combined and heated through. Keep warm over low heat.
In separate large saute pan, over medium heat, add wine, tomatoes, 1/4 cup chopped parsley, shrimp and chicken pieces; heat until warm (about 6 minutes). Add frozen Peas to chicken and wine mixture, cover, and turn off heat.
Spoon Cauliflower mixture on the bottom of a large serving platter or Paella dish. Place chicken pieces over Cauliflower and spoon shrimp, tomato, Peas and wine sauce over entire dish.
